- 500 g duck breast with skin
- 300 g duck fat
- 1 bunch of fresh chives
- salt and pepper to taste
You can also add:
- 100 g roasted hazelnuts
Preparation:
1. Salt the duck breast with skin and roast in a pan or oven until well done.
2. Wrap the roasted duck breast in aluminum foil and let it rest for about 10 minutes.
3. Cut the breast with skin into small cubes (IMPORTANT: the breast must be dry).
4. Add chopped chives, salt and pepper.
5. Add everything together to the duck fat and mix*.
6. Put the spread in a jar and store in the refrigerator for up to 15 days, but once opened, we recommend using it within 3 days.
*Tip: If you wish, you can also add roasted hazelnuts to the spread.
